Ingredients
  

  • 2 large chicken breasts
  • 1 cup mozzarella cheese shredded
  • 2 tablespoons cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 egg
  • 1 cup almond flour
  • ½ cup crushed pork rinds or low-carb breadcrumbs
  • 1 teaspoon Italian seasoning
  • Cooking spray or olive oil spray

Method
 

  1. Step 1: Prepare the Chicken
  2. Slice each chicken breast carefully to create a pocket without cutting all the way through.
  3. Step 2: Make the Filling
  4. In a bowl, mix mozzarella cheese, cream cheese, garlic powder, and a little black pepper.
  5. Step 3: Stuff the Chicken
  6. Fill each chicken pocket with the cheese mixture. Secure with toothpicks if needed.
  7. Step 4: Prepare the Coating
  8. In one bowl, beat the egg.
  9. In another bowl, mix almond flour, crushed pork rinds, paprika, Italian seasoning, salt, and pepper.
  10. Step 5: Coat the Chicken
  11. Dip each stuffed chicken breast into the egg, then coat evenly in the breadcrumb mixture.
  12. Step 6: Air Fry
  13. Preheat the air fryer to 190°C (375°F).
  14. Spray the basket lightly with oil.
  15. Place the stuffed chicken cutlets in the basket and spray the tops lightly with oil.
  16. Air fry for 16–20 minutes, flipping halfway through, until golden brown and fully cooked.
