Ingredients
  

For the Dough:
  • 1 cup almond flour or ¾ cup coconut flour as substitute
  • 1 tbsp coconut oil or unsalted butter melted
  • 1 tsp baking powder
  • 1 tbsp erythritol or monk fruit sweetener
  • 1 large egg
  • ½ tsp vanilla extract
  • Pinch of salt
For the Filling:
  • 3 oz full-fat cream cheese softened
  • 1 tbsp butter softened
  • 1 tsp cinnamon powder
  • tbsp powdered erythritol or monk fruit
For the Topping (optional):
  • 1 tbsp melted butter
  • ¼ tsp cinnamon powder
  • ½ tbsp granulated keto sweetener

Method
 

Preheat the Oven:
  1. Preheat your oven to 350°F (175°C). Line your baking dish with parchment paper.
Prepare the Dough:
  1. In a mixing bowl, combine almond flour, baking powder, salt, and erythritol. Add the egg, vanilla extract, and melted butter. Mix until a soft, slightly sticky dough forms.
Roll Out the Dough:
  1. Place the dough between two sheets of parchment paper. Roll it out into a thin rectangle (about ¼ inch thick).
Make the Filling:
  1. In another bowl, mix softened cream cheese, butter, cinnamon, and sweetener until creamy and smooth.
Assemble the Rolls:
  1. Spread the cream cheese mixture evenly over the rolled-out dough. Carefully roll it up lengthwise to form a log. Slice into 6 equal rolls.
Bake:
  1. Arrange rolls in the prepared dish. Bake for 15–18 minutes, or until golden and crisp on the edges.
Add the Topping (Optional):
  1. Brush the warm rolls with melted butter and sprinkle lightly with cinnamon and sweetener for extra crunch and aroma.
Cool and Serve:

Notes

  • You can replace almond flour with coconut flour, but reduce the quantity (¾ cup coconut flour = 1 cup almond flour).
  • To make it extra crispy, bake for an additional 2–3 minutes or air fry at 320°F for 10 minutes.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Reheat in the oven for 3–5 minutes before serving for the best crispiness.
