Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line your baking dish with parchment paper.
Prepare the Dough:
- In a mixing bowl, combine almond flour, baking powder, salt, and erythritol. Add the egg, vanilla extract, and melted butter. Mix until a soft, slightly sticky dough forms.
Roll Out the Dough:
- Place the dough between two sheets of parchment paper. Roll it out into a thin rectangle (about ¼ inch thick).
Make the Filling:
- In another bowl, mix softened cream cheese, butter, cinnamon, and sweetener until creamy and smooth.
Assemble the Rolls:
- Spread the cream cheese mixture evenly over the rolled-out dough. Carefully roll it up lengthwise to form a log. Slice into 6 equal rolls.
Bake:
- Arrange rolls in the prepared dish. Bake for 15–18 minutes, or until golden and crisp on the edges.
Add the Topping (Optional):
- Brush the warm rolls with melted butter and sprinkle lightly with cinnamon and sweetener for extra crunch and aroma.
Cool and Serve:
- Allow to cool slightly before serving. Enjoy warm for the best texture and flavor.
Notes
- You can replace almond flour with coconut flour, but reduce the quantity (¾ cup coconut flour = 1 cup almond flour).
- To make it extra crispy, bake for an additional 2–3 minutes or air fry at 320°F for 10 minutes.
- Store leftovers in an airtight container in the fridge for up to 4 days.
- Reheat in the oven for 3–5 minutes before serving for the best crispiness.
