Ingredients
  

1 lb (450 g) beef (flank steak, sirloin, or ribeye), thinly sliced
4 cups fresh broccoli florets
2 tbsp avocado oil (or olive oil)
2 cloves garlic, minced
1 tsp fresh ginger, grated
3 tbsp soy sauce (or coconut aminos for paleo)
1 tbsp sesame oil
1 tsp rice vinegar (optional)
1 tsp low-carb sweetener (erythritol or monk fruit)
½ tsp xanthan gum (optional, for thickening)
Salt & pepper to taste
Sesame seeds & chopped green onions (for garnish)

Equipment

  • Large skillet or wok (for stir-frying)
  • Sharp knife (for slicing beef)
  • Cutting board
  • Small mixing bowl (for sauce)
  • Whisk or spoon (to mix sauce)
  • Tongs or spatula (for stir-frying
  • Pot (for blanching broccoli, optional if stir-frying directly)

Method
 

Prepare beef:
  1. Slice beef thinly against the grain. Season lightly with salt and pepper.
Blanch broccoli:
  1. Boil water, add broccoli florets for 2 minutes, then drain and set aside.
Make sauce:
  1. In a small bowl, whisk soy sauce, sesame oil, vinegar, sweetener, garlic, and ginger. Add xanthan gum if using.
Cook beef:
  1. Heat avocado oil in a large skillet or wok over high heat. Stir-fry beef for 3–4 minutes until browned. Remove and set aside.
Combine everything:
  1. Add broccoli to the skillet, pour in sauce, and toss well. Return beef, stir-fry for another 2–3 minutes until everything is coated and hot.
Garnish & serve:
  1. Sprinkle with sesame seeds and green onions before serving.

  • Slice beef thin for tenderness.
  • Swap broccoli with broccolini, bok choy, or mushrooms for variety.
  • Serve over cauliflower rice or zucchini noodles for a complete keto meal.
