Ingredients
  

For the Brownie Base:
  • 1/2 cup unsalted butter melted
  • 2/3 cup granulated keto sweetener like erythritol or monk fruit
  • 3 large eggs room temperature
  • 1/2 tsp vanilla extract
  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 1/4 tsp baking powder
For the Green Frosting:
  • 4 oz cream cheese softened
  • 2 tbsp unsalted butter softened
  • 1/4 cup powdered keto sweetener
  • 1/4 tsp vanilla extract
  • Green food coloring gel works best
For Decoration:
  • Small handful of fresh cranberries or raspberries for ornaments
  • 1 tbsp crushed pistachios or sugar-free sprinkles
  • Small star shapes cut from a slice of cheese like cheddar or provolone or a keto-friendly yellow candy
  • 8-10 pecan halves for the trunks

Method
 

Bake the Brownies:
  1. Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together the melted butter and granulated sweetener until well combined.
  3. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  4. In a separate small bowl, whisk together the almond flour, cocoa powder, salt, and baking powder.
  5. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 20-25 minutes, or until the center is set. Let the brownie cool completely in the pan before lifting it out using the parchment paper.
Cut out the Trees:
  1. Once the brownie is completely cool, place it on a cutting board. Use a Christmas tree cookie cutter to cut out tree shapes. Alternatively, you can cut the brownie slab into triangles with a knife.
Prepare the Frosting:
  1. In a medium bowl, use a hand mixer to beat the softened cream cheese and butter until smooth and creamy.
  2. Add the powdered sweetener and vanilla extract, and beat until light and fluffy.
  3. Add green food coloring, a few drops at a time, and mix until you reach your desired shade of Christmas green.
  4. Transfer the frosting to a piping bag fitted with a star tip.
Assemble and Decorate:
  1. Pipe swags of green frosting across each brownie tree to resemble branches, starting from the bottom and working your way up to the tip.
  2. Gently press a pecan half into the bottom of each tree to form the trunk.
  3. Decorate the "branches" with berries, crushed pistachios, or sprinkles to look like ornaments.
  4. Place a cheese or keto candy star on the very top of each tree.
