Ingredients
  

  • 10 large eggs
  • ½ cup shredded cheddar cheese
  • ½ cup chopped bell peppers red + green for a festive look
  • ¼ cup chopped spinach
  • ¼ cup cooked crumbled turkey or chicken sausage optional
  • 2 tbsp chopped green onions
  • ¼ cup heavy cream
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • Salt and black pepper to taste
  • 1 tbsp olive oil or melted butter for greasing

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 12-cup muffin tray with olive oil or butter.
  3. In a large mixing bowl, whisk together eggs, heavy cream, salt, pepper, and all spices.
  4. Stir in chopped bell peppers, spinach, cheese, and sausage.
  5. Pour the egg mixture evenly into each muffin cup, filling about ¾ full.
  6. Bake for 18–20 minutes or until the muffins are set and lightly golden on top.
  7. Allow them to cool for a few minutes before removing from the tray.
  8. Serve warm or store for meal prep throughout the week.

Notes

These muffins store well for 4–5 days in the refrigerator and can be frozen for up to 2 months. Reheat in the microwave or air fryer for a warm, fluffy, ready-to-go breakfast. Customize with your choice of keto-friendly veggies, meats, or cheeses to match your family’s holiday preferences.
